Westward pursues perfection through our philosophy of Minimalist Distilling, going to great lengths to bring out the flavor of our grain and other natural ingredients. Every step is meant to express flavor; never to strip away or mask impurities.
We begin by brewing an artisanal American pale ale from scratch, using locally malted barley, ale yeast, and slow, low temperature fermentation. We distill twice in custom low-reflux copper pot stills that are designed to create a robust spirit, and transform our fresh beer into whiskey. We age to perfection at a relatively low proof in new, lightly toasted American Oak barrels. We mingle our barrels in small batches to achieve Westward’s signature flavor profile – balanced and bold, with just the right amount of spice and sweetness.
